EXTRA VERGINE Olive is the highest category, unrefined olive oil. The essence of oleic acid (acidity level) is not higher than 1%.
It is produced mechanically using the cold-pressing method. The olives were not passing any thermal or chemical treatments. In essence, it saves a maximum of vitamins and useful elements in the oil. This oil is much tastier than a refined one.
During oil production is used a mixture of ripe olives of different varieties grown in the EU-countries. It has a greenish-pistachio color and a pleasant smell characteristic of olive oil. Light bitterness and freshness characterize the taste.
OLIO EXTRA VERGINE DI OLIVA goes perfect with fresh vegetable salads and dressings. Please note that natural olive oil becomes cloudier and thicker at temperatures below 8.5°C; at the bottom of the bottle may appear a slight precipitate. However, this does not affect the taste. In a warm room, the oil restores its color and density.
